  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 8 oz fresh mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp Dijon mustard
  • 1 tsp fresh thyme

Instructions

  1. Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; place them in the greased baking dish.
  3. In a skillet over medium heat, sauté onions, bell peppers, and mushrooms in olive oil until tender (about 5 minutes).
  4. In a bowl, whisk together heavy cream, chicken broth, Dijon mustard, and thyme until smooth; pour over sautéed vegetables.
  5. Pour the vegetable sauce mixture over the seasoned chicken; stir gently to coat.
  6. Cover with foil and bake for 30–35 minutes; remove foil during the last 10 minutes to brown the top.
