  • 8 oz fettuccine or penne pasta
  • 2 tbsp olive oil
  • 12 oz boneless skinless salmon fillets
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil or parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the salmon with salt and pepper, then cook skin-side down for about 6 minutes on each side until golden brown. Remove from heat and flake into pieces.
  3. In the same skillet, sauté the minced garlic until fragrant (about 1 minute). Add heavy cream and let it simmer for 3 minutes while whisking occasionally.
  4. Stir in Parmesan cheese until melted. Fold in fresh herbs and flaked salmon.
  5. Combine the cooked pasta with the creamy sauce, adding reserved pasta water if needed for consistency. Finish with a squeeze of lemon juice before serving.
