  • 8 oz spaghetti or fettuccine
  • 2 large sweet yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, combine olive oil and butter. Once melted, add sliced onions.
  3. Cook onions low and slow for 20-25 minutes until golden brown and caramelized, stirring occasionally.
  4. Add minced garlic to the skillet and sauté for an additional minute.
  5. Combine the drained pasta with the onion mixture in the skillet. Gradually add reserved pasta water until reaching desired sauce consistency.
