  • 4 boneless, skinless chicken breasts
  • 8 oz thinly sliced ham
  • 8 oz Swiss cheese
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 4 tbsp butter
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Pound chicken breasts to about half an inch thick.
  2. Layer ham and cheese on each breast, roll tightly, and secure with toothpicks.
  3. Set up a breading station: flour seasoned with salt and pepper, beaten eggs, and panko breadcrumbs.
  4. Dredge each chicken roll in flour, dip in egg, then coat with breadcrumbs.
  5. In a skillet over medium heat, melt butter and sear the chicken until golden brown (3-4 minutes per side).
  6. Pour heavy cream mixed with chicken broth around the chicken in the skillet.
  7. Transfer the skillet to the oven and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
