  • 4 large eggs
  • 4 large flour tortillas
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. In a skillet over medium heat, cook the chorizo until browned and crumbly (5-7 minutes).
  2. In a bowl, whisk eggs with salt and pepper. Push the cooked chorizo to one side and scramble the eggs in the empty space until just set.
  3. Combine the scrambled eggs with chorizo and mix in half of the shredded cheese.
