- 1 cup brewed espresso or strong coffee, cooled
- 16 oz mascarpone cheese
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder, plus extra for dusting
- 4 large eggs, separated
Instructions
- Brew espresso or strong coffee and allow it to cool.
- In a mixing bowl, whisk egg yolks and sugar until pale and creamy. Gently fold in the mascarpone cheese until smooth.
- In another bowl, whip egg whites until stiff peaks form. Carefully fold them into the mascarpone mixture.
- Quickly dip each ladyfinger into the cooled coffee and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
- Dust generously with cocoa powder before serving. Refrigerate for at least 4 hours to set.
