  • 6 oz ladyfingers (about 24 pieces)
  • 1 cup brewed espresso or strong coffee, cooled
  • 16 oz mascarpone cheese
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder, plus extra for dusting
  • 4 large eggs, separated

Instructions

  1. Brew espresso or strong coffee and allow it to cool.
  2. In a mixing bowl, whisk egg yolks and sugar until pale and creamy. Gently fold in the mascarpone cheese until smooth.
  3. In another bowl, whip egg whites until stiff peaks form. Carefully fold them into the mascarpone mixture.
  4. Quickly dip each ladyfinger into the cooled coffee and layer them in a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  6. Dust generously with cocoa powder before serving. Refrigerate for at least 4 hours to set.
