Ingredients

Scale
  • 2 cups long-grain rice
  • 2 fresh lemons (zest and juice)
  • 4 cups vegetable broth
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until it runs clear to remove excess starch.
  2. In a large saucepan over medium heat, heat olive oil. Add rinsed rice and sauté for about 3 minutes until fragrant.
  3. Pour in vegetable broth, lemon juice, and zest. Stir well and bring to a boil.
  4. Once boiling, reduce heat to low, cover tightly, and simmer for 18-20 minutes until liquid is absorbed.
  5. Turn off heat but keep the lid on for an additional 5 minutes. Fluff the rice with a fork.
  6. Stir in chopped parsley, season with salt and pepper, and serve warm or chilled.
