Grilled Peach Burrata Salad is a vibrant, refreshing dish that captures the essence of summer. Juicy grilled peaches meet creamy burrata cheese atop a bed of mixed greens, drizzled with a tangy balsamic glaze.   • 2 ripe peaches, halved and pitted
  • 8 oz burrata cheese
  • 4 cups mixed greens (arugula and spinach)
  • 2 tbsp balsamic glaze
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush peach halves with olive oil and place cut-side down on the grill. Grill for 4-5 minutes until grill marks appear and peaches soften.
  3. In a large bowl, combine mixed greens. Tear burrata into pieces and add on top of the greens.
  4. Once grilled, layer peach halves atop the salad. Drizzle with balsamic glaze and olive oil; season with salt and pepper.
