  • 2 lbs venison roast
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp fresh thyme, finely chopped
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the venison roast dry with paper towels.
  2. In a bowl, mix rosemary, thyme, garlic, olive oil, salt, and pepper to form a paste.
  3. Rub the herb mixture all over the venison roast.
  4. Heat a skillet over medium-high heat and sear the roast for 3-4 minutes on each side until golden brown.
  5. Transfer the roast to a roasting pan and bake in the oven for about 20-25 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.
  6. Remove from the oven and let rest for 10-15 minutes before slicing.
