  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 1.5 cups shredded cheese blend (mozzarella and cheddar)
  • 1 tsp keto-friendly seasoning mix
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; cook for 6-7 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté garlic and mushrooms for about 5 minutes until softened.
  4. Add heavy cream and simmer for 3-4 minutes until slightly thickened.
  5. Slice the chicken and layer it in the baking dish. Pour the creamy mushroom sauce over the chicken.
  6. Sprinkle cheese on top and bake for 25-30 minutes until bubbling and golden brown.
