- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 1 cup heavy cream
- 1.5 cups shredded cheese blend (mozzarella and cheddar)
- 1 tsp keto-friendly seasoning mix
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; cook for 6-7 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté garlic and mushrooms for about 5 minutes until softened.
- Add heavy cream and simmer for 3-4 minutes until slightly thickened.
- Slice the chicken and layer it in the baking dish. Pour the creamy mushroom sauce over the chicken.
- Sprinkle cheese on top and bake for 25-30 minutes until bubbling and golden brown.
