  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 tsp salt

Instructions

  1. Warm the milk in a saucepan until just warm to touch; sprinkle in the yeast and let sit until frothy (about 5 minutes).
  2. In a mixing bowl, whisk together flour, sugar, poppy seeds, and salt.
  3. Add the yeast mixture, beaten eggs, melted butter, lemon zest, and lemon juice to the dry ingredients. Stir until a shaggy dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place in an oiled bowl, cover with a towel, and let rise in a warm spot until doubled in size (about 1 hour).
  6. Punch down the dough, shape into balls, and place them in a greased baking dish.
  7. Preheat oven to 350°F (175°C) while allowing rolls to rise for another 30 minutes.
  8. Bake for 20-25 minutes until golden brown on top.
