  • 2 cups long-grain parboiled rice
  • 4 medium tomatoes, chopped
  • 2 red bell peppers, chopped
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1/4 cup vegetable oil
  • 3 cups chicken broth or water
  • 1 tsp dried thyme
  • 1 tsp curry powder
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: chop onions, tomatoes, bell peppers, garlic, and ginger.
  2. Blend the tomatoes and red bell peppers until smooth.
  3. Heat vegetable oil in a large pot over medium heat. Sauté the onions until golden brown.
  4. Add the blended tomato mixture to the pot and cook for about 10-15 minutes until it thickens.
  5. Stir in the rice until well-coated with sauce. Pour in chicken broth or water to cover the rice.
  6. Season with thyme, curry powder, bay leaves, salt, and pepper; stir to combine.
  7. Cover the pot with a lid and simmer on low heat for about 30-40 minutes until all liquid is absorbed and rice is tender.
