  • 8 cups stale bread (cubed)
  • 1 lb breakfast sausage (crumbled)
  • 2 cups fresh spinach (chopped)
  • 6 large eggs
  • 2 cups whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook crumbled sausage until browned (5–7 minutes). Add diced onions and minced garlic; sauté until fragrant.
  3. Stir in chopped spinach and Italian seasoning; cook until wilted, about 2 minutes.
  4. Layer cubed bread in the greased baking dish, followed by the sausage mixture and half of the shredded cheese.
  5. In a bowl, whisk together eggs, milk, salt, and pepper. Pour over the layered ingredients.
  6. Top with remaining cheese and cover with foil. Bake for 30 minutes; remove foil and bake for an additional 15–20 minutes until golden brown.
