  • 2 skin-on fresh salmon fillets (about 6 oz each)
  • 3 tbsp raw honey
  • 2 tbsp low-sodium soy sauce
  • 1 tsp fresh ginger, grated
  • 1 tbsp lemon juice
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together honey, soy sauce, ginger, and lemon juice to create the glaze.
  3. Place salmon fillets on the baking sheet skin-side down and generously brush with the honey glaze.
