  • 4 medium sweet potatoes (about 2 lbs)
  • 4 tbsp unsalted butter
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup sharp cheddar cheese, shredded
  • 3 green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and pierce each sweet potato several times with a fork.

  5. Refill the skins with the filling and bake for an additional 15-20 minutes until heated through.
