Ingredients

  • 1 cup green or brown lentils
  • 2 cups water
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, finely chopped
  • ½ cup fresh parsley, roughly chopped
  • ½ cup extra virgin olive oil
  • Juice of 2 lemons (about ¼ cup)
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water until clear. In a pot, combine with water and a pinch of salt. Bring to a boil, reduce heat, and simmer uncovered for 20-25 minutes until tender but firm.
  2. While lentils cook, prepare the vegetables: dice cucumber, halve cherry tomatoes, chop red onion and parsley.
  3. For the dressing, whisk together olive oil, lemon juice, salt, and pepper in a bowl.
  4. Once lentils are cooked and cooled slightly, drain excess water and transfer to a large mixing bowl. Add prepared vegetables and dressing; toss gently until well combined.
  5. Let the salad marinate for at least 30 minutes before serving to enhance flavors.
