  • 2 tbsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  4. Heat 1 tbsp olive oil in a skillet over medium heat; sauté sliced zucchini and bell peppers until slightly softened (about 5 minutes).
  5. In another skillet over high heat, sear marinated pork on all sides until golden brown (3-4 minutes per side).
  6. Transfer seared pork and sautéed vegetables onto a baking sheet; roast for about 20-25 minutes or until internal temperature reaches 145°F (63°C).
