  • 1 cup long grain white rice
  • 2 cups low-sodium chicken broth
  • 1/4 cup fresh lemon juice (about 1 large lemon)
  • 4 garlic cloves, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts generously with salt and pepper and place them in the bottom of the slow cooker.
  2. Sprinkle minced garlic over the chicken.
  3. In a bowl, whisk together chicken broth, lemon juice, thyme, and parsley. Pour this mixture over the chicken.
  4. Evenly sprinkle rice on top of the chicken and liquid mixture.
  5. Cover and cook on low for 6 hours or high for 3 hours until the chicken reaches an internal temperature of at least 165°F.
  6. Fluff the rice with a fork before serving, garnishing with extra herbs if desired.
