- 2 cups low-sodium beef broth
- 1 cup sour cream
- 1 tbsp Dijon mustard
- 12 oz egg noodles
Instructions
- Chop the onion and garlic; slice the mushrooms.
- (Optional) Sear the beef chuck roast in a skillet until browned on all sides.
- Place the beef (seared or raw) into the slow cooker with onion, garlic, mushrooms, Dijon mustard, and beef broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.
- Stir in sour cream about 30 minutes before serving.
- Cook egg noodles according to package instructions and serve with stroganoff.
