Ingredients

  • 2 lbs beef chuck roast
  • 8 oz fresh mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 12 oz egg noodles

Instructions

  1. Chop the onion and garlic; slice the mushrooms.
  2. (Optional) Sear the beef chuck roast in a skillet until browned on all sides.
  3. Place the beef (seared or raw) into the slow cooker with onion, garlic, mushrooms, Dijon mustard, and beef broth.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.
  5. Stir in sour cream about 30 minutes before serving.
  6. Cook egg noodles according to package instructions and serve with stroganoff.
