- 8 oz rotini pasta
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium zucchini, sliced into thick rounds
- 1 medium red onion, cut into wedges
- 1 cup cherry tomatoes, halved
- ¼ cup fresh basil leaves
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the rotini in a large pot of salted boiling water until al dente (about 10-12 minutes). Drain and rinse under cold water.
- While the pasta cooks, slice the vegetables and arrange them on a platter.
- Preheat the grill or grill pan over medium heat. Drizzle olive oil over the vegetables; season with salt and pepper. Grill for about 5-7 minutes per side until charred but crisp.
- In a large bowl, combine the cooked pasta and grilled vegetables. Tear fresh basil leaves over the top.
- Squeeze lemon juice over the mixture and toss gently to combine. Adjust seasoning if needed.
