  • 1 lb beef sirloin, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 8 oz egg noodles (for serving)

Instructions

  1. Prepare your ingredients by chopping onions and garlic and slicing the beef.
  2. In a large skillet over medium-high heat, heat olive oil. Sauté the beef for about 3 minutes until browned but not fully cooked; remove from the pan.
  3. In the same skillet, add onions and cook until translucent, then add mushrooms until golden brown.
  4. Lower heat; add garlic and sauté for 30 seconds. Pour in beef broth and stir in Dijon mustard; bring to a simmer.
  5. Stir in sour cream until smooth and return the beef to the pan. Heat through without boiling.
  6. Serve over cooked egg noodles and garnish with parsley if desired.
