  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 1 cup bell peppers, diced (any color)
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink. Drain excess fat and transfer to the crockpot.
  2. In the same skillet, sauté chopped onions and bell peppers for about five minutes until tender.
  3. Add the sautéed veggies to the crockpot with the browned beef.
  4. Stir in kidney beans, diced tomatoes (with juice), garlic, chili powder, cumin, salt, and pepper.
  5. Mix well and cover. Cook on low for 6 hours or high for 3 hours.
