Method
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
- In a large mixing bowl, combine rolled oats, milk, mashed bananas, honey, baking powder, cinnamon, salt, and eggs. Stir until well combined.
- Gently fold in the mixed berries and chopped nuts.
- Pour the oatmeal mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- Allow the oatmeal cups to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
- Serve warm or store in an airtight container in the refrigerator for up to 5 days.
