Banoffee Pie

A delicious no-bake dessert made with a buttery biscuit base, layers of sweet toffee, fresh bananas, and whipped cream.

Ingredients
  

For the Base
  • 1.5 cups digestive biscuits crushed
  • 0.5 cup unsalted butter melted
For the Toffee Layer
  • 1 can sweetened condensed milk cooked for 1-2 hours for toffee
  • 1 tablespoon brown sugar
For the Topping
  • 2 large bananas sliced
  • 1 cup heavy cream whipped
  • 1 tablespoon cocoa powder for dusting

Method
 

Prepare the Base
  1. In a bowl, mix the crushed digestive biscuits with melted butter until well combined.
  2. Press the mixture into the bottom of a 9-inch pie dish to form an even base.
  3. Refrigerate the base for at least 15 minutes to set.
Make the Toffee Layer
  1. While the base is setting, cook the sweetened condensed milk in a pot of simmering water for 1-2 hours.
  2. Stir occasionally to prevent burning, until it turns a golden brown color and thickens.
  3. Once done, remove from heat and let cool slightly.
Assemble the Pie
  1. Spread the toffee layer evenly over the chilled biscuit base.
  2. Layer the sliced bananas on top of the toffee.
  3. Finally, spread the whipped cream over the bananas.
Garnish and Serve
  1. Dust the top with cocoa powder for garnish.
  2. Refrigerate for at least 10 minutes before serving to allow flavors to meld.
  3. Slice and enjoy your delicious Banoffee Pie!

Notes
