Method
Marinate the Pork
- In a bowl, whisk together the apple cider, soy sauce, Dijon mustard, garlic powder, and black pepper.
- Place the pork chops in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours.
Cook the Pork Chops
- Heat the olive oil in a large skillet over medium-high heat.
- Remove the pork chops from the marinade and season both sides with salt. Discard the marinade.
- Sear the pork chops in the skillet for 5-6 minutes on each side until they are golden brown and cooked through (internal temperature of 145°F).
Make the Sauce
- In the same skillet, add the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the cornstarch mixture and thyme, cooking until the sauce thickens, about 2 minutes.
Serve
- Plate the pork chops and drizzle the sauce over them.
- Serve hot with your favorite sides.
