Cider Pork Chops

Ingredients
  

For the Marinade
  • 1 cup apple cider
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
For the Pork Chops
  • 4 pieces bone-in pork chops about 1 inch thick
  • 1 tablespoon olive oil for searing
  • 1 teaspoon salt
For the Sauce
  • 1 cup chicken broth
  • 2 tablespoons cornstarch mixed with 2 tablespoons of water
  • 1 tablespoon fresh thyme or 1 tsp dried

Method
 

Marinate the Pork
  1. In a bowl, whisk together the apple cider, soy sauce, Dijon mustard, garlic powder, and black pepper.
  2. Place the pork chops in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours.
Cook the Pork Chops
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Remove the pork chops from the marinade and season both sides with salt. Discard the marinade.
  3. Sear the pork chops in the skillet for 5-6 minutes on each side until they are golden brown and cooked through (internal temperature of 145°F).
Make the Sauce
  1. In the same skillet, add the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  2. Stir in the cornstarch mixture and thyme, cooking until the sauce thickens, about 2 minutes.
Serve
  1. Plate the pork chops and drizzle the sauce over them.
  2. Serve hot with your favorite sides.

Notes
