Prepare the Chili Base
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until the onion is translucent, about 5 minutes.
- Add the ground beef to the pot, breaking it up with a spoon. Cook until browned, about 10 minutes.
- Stir in the beef broth, tomato sauce, chili powder, cumin, cinnamon, cocoa powder, salt, and black pepper.
- Bring the mixture to a simmer, then reduce heat to low and let it cook uncovered for 30 minutes, stirring occasionally.
Cook the Spaghetti
- While the chili is simmering, cook the spaghetti according to package instructions until al dente.
- Drain the spaghetti and set aside.
Serve
- To serve, place a portion of spaghetti on a plate.
- Top with a generous ladle of chili, then sprinkle with shredded cheddar cheese, chopped onions, and kidney beans.
