Ingredients
  

For the Base
  • 2 pounds fresh spinach washed and stems removed
  • 2 tablespoons unsalted butter for sautéing
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil for drizzling
  • 1/4 cup grated Parmesan cheese for topping

Method
 

Prepare the Spinach
  1. In a large pot, melt 2 tablespoons of butter over medium heat.
  2. Add the fresh spinach and sauté until wilted, about 5 minutes. Remove from heat and let cool slightly.
  3. Once cooled, squeeze out excess moisture from the spinach and chop coarsely.
Make the Cream Sauce
  1. In a saucepan, combine 2 tablespoons of butter and melt over medium heat.
  2. Whisk in 2 tablespoons of flour and cook for 1-2 minutes until golden.
  3. Gradually add 1 cup of heavy cream, whisking continuously until thickened, about 5 minutes.
  4. Stir in 1 cup of grated Parmesan cheese, garlic powder, salt, and black pepper until well combined.
Combine and Bake
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chopped spinach with the cream sauce and mix well.
  3. Transfer the spinach mixture to a greased baking dish, spreading it evenly.
  4. In a small bowl, mix together 1 cup of panko breadcrumbs, 1/4 cup of grated Parmesan cheese, and 2 tablespoons of olive oil.
  5. Sprinkle the breadcrumb mixture evenly over the spinach.
Final Bake
  1. Bake in the preheated oven for 20-25 minutes or until the top is golden brown and crispy.
  2. Remove from the oven and let cool for a few minutes before serving.

Notes
