Ingredients
  

For the Base
  • 12 ounces pasta such as fettuccine or penne
  • 1 cup pumpkin puree canned or homemade
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
For the Topping
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh parsley chopped

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
  2. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
Prepare the Sauce
  1. In a large skillet over medium heat, combine the pumpkin puree, vegetable broth, and heavy cream.
  2. Stir in the garlic powder, onion powder, salt, black pepper, and nutmeg. Bring to a simmer and let it cook for about 5 minutes.
Combine Pasta and Sauce
  1. Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly.
  2. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Serve
  1. Plate the creamy pumpkin pasta into serving bowls.
  2. Top with grated parmesan cheese and chopped parsley before serving.
