Prepare the Dough
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the creamy peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt. Mix well until smooth.
- Chill the dough in the refrigerator for about 10 minutes to make it easier to handle.
Form and Bake the Cookies
- Scoop out tablespoon-sized portions of the dough and roll them into balls.
- Roll each ball in the powdered sugar to coat them well, then place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
