Ingredients
  

For the Base
  • 1 cup peanut butter smooth
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
For the Topping
  • 24 mini chocolate peanut butter cups chocolate peanut butter cups unwrapped

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter, granulated sugar, egg, vanilla extract, and baking soda. Mix until smooth.
  3. Scoop tablespoon-sized amounts of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
  5. Remove the cookies from the oven and immediately press a mini chocolate peanut butter cup into the center of each cookie.
  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes
