Ingredients
  

For the Chicken Marinade
  • 1 pound chicken breast cut into cubes
  • 3 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon ground ginger
  • 2 cloves garlic minced
For Garnishing
  • 1 cup cucumber sliced
  • 1 cup carrot julienned
  • 1/4 cup peanuts chopped
  • 1 tablespoon cilantro chopped

Method
 

Prepare the Marinade
  1. In a large bowl, combine soy sauce, peanut butter, honey, lime juice, ground ginger, and minced garlic. Mix well until smooth.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
Prepare the Skewers
  1. While the chicken is marinating, soak wooden skewers in water for about 10 minutes to prevent burning.
  2. Preheat the grill to medium-high heat.
Skewer the Chicken
  1. Thread the marinated chicken cubes onto the soaked skewers, leaving a little space between each piece.
Grill the Skewers
  1. Place the skewers on the preheated grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes.
  2. Serve hot, garnished with sliced cucumber, julienned carrot, chopped peanuts, and cilantro.
