Ingredients
  

For the Chicken
  • 1 pound chicken breast cut into bite-sized pieces
  • 1 tablespoon soy sauce low sodium preferred
  • 1 tablespoon vegetable oil for cooking
  • 1 teaspoon garlic powder
For the Sauce
  • 1 cup pineapple juice preferably fresh
  • 1/4 cup brown sugar packed
  • 2 tablespoons cornstarch to thicken the sauce
  • 1 tablespoon rice vinegar
  • 1 cup pineapple chunks canned or fresh
  • 1 teaspoon red pepper flakes optional for heat
For Serving
  • 2 cups cooked rice to serve with chicken
  • 2 tablespoons green onions sliced, for garnish

Method
 

Cook the Chicken
  1. In a large skillet, heat the vegetable oil over medium-high heat.
  2. Add the chicken pieces and season with soy sauce and garlic powder. Cook until golden brown and cooked through, about 7-10 minutes.
Prepare the Sauce
  1. In a bowl, whisk together the pineapple juice, brown sugar, cornstarch, rice vinegar, and red pepper flakes.
  2. Add the pineapple chunks to the sauce mixture.
Combine Chicken and Sauce
  1. Pour the sauce over the cooked chicken in the skillet.
  2. Stir to coat the chicken evenly and bring to a simmer. Cook for an additional 5 minutes until the sauce thickens.
Serve
  1. Serve the sticky pineapple chicken over cooked rice.
  2. Garnish with sliced green onions before serving.

Notes
