Prepare the Filling
- In a large skillet over medium heat, brown the ground beef until fully cooked.
- Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in the black beans and taco seasoning, mixing well. Remove from heat.
Assemble the Enchiladas
- Preheat the oven to 375°F (190°C).
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Place a tortilla on a flat surface, add a portion of the beef filling and a sprinkle of cheese, then roll it up tightly.
- Repeat with the remaining tortillas and filling, placing them seam-side down in the baking dish.
Bake the Enchiladas
- Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well covered.
- Sprinkle the remaining cheese on top.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden.
Serve
- Once baked, remove from oven and let cool for a few minutes.
- Garnish with sour cream and chopped cilantro before serving.
