- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1/2 cup freshly squeezed lemon juice (about 2 large lemons)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh basil
- Salt & pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat.
- Season both sides of the chicken breasts with salt and pepper. Sear in the hot skillet for about 5–6 minutes per side until golden brown.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant. Deglaze the pan by adding lemon juice and chicken broth, scraping up any bits from the bottom.
- Gradually stir in heavy cream and let simmer for about 4–5 minutes until the sauce thickens.
- Stir in grated Parmesan cheese until melted, then add chopped parsley and basil before serving.
