  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp Southwest seasoning
  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 4 large flour or corn tortillas
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup salsa

Instructions

  1. Marinate the chicken breasts in olive oil and Southwest seasoning for at least 30 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken for about 6-7 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F).
