- 1 can (15 oz) chickpeas, drained and rinsed
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium zucchini, chopped
- 1 medium red onion, chopped
- 2 tbsp olive oil
- 3 tbsp tahini
- 2 tbsp freshly squeezed lemon juice
- 1 tsp garlic powder
- 1 tsp ground cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, toss the bell peppers, zucchini, and red onion with olive oil, garlic powder, cumin, salt, and pepper until evenly coated.
- Spread the veggies on a baking sheet in a single layer and roast for 25–30 minutes until golden brown.
- Add the chickpeas to the baking sheet during the last 10 minutes of roasting.
- While the vegetables are roasting, whisk together tahini, lemon juice, salt, and water in a small bowl until smooth.
- Once roasted, combine the veggies and chickpeas in a bowl and drizzle with tahini dressing before serving.
