  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, chopped
  • 1 medium red onion, chopped
  • 2 tbsp olive oil
  • 3 tbsp tahini
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss the bell peppers, zucchini, and red onion with olive oil, garlic powder, cumin, salt, and pepper until evenly coated.
  3. Spread the veggies on a baking sheet in a single layer and roast for 25–30 minutes until golden brown.
  4. Add the chickpeas to the baking sheet during the last 10 minutes of roasting.
  5. While the vegetables are roasting, whisk together tahini, lemon juice, salt, and water in a small bowl until smooth.
  6. Once roasted, combine the veggies and chickpeas in a bowl and drizzle with tahini dressing before serving.
